I did tag up on this once but I have lost the link to the relevant website.
Basically, a landholder had the right to exclude people from his land but I think a notice to that effect needs to be posted.
However, the countryside is crisscrossed with many thousands of kilometres of footpaths. The tourist information office had maps for these paths in in many of the local communes (cartes randonées). The footpath are (usually) well marked and often cross farmland. Rather like bridleways in the uk.
One good reason for sticking to the paths is that you'll have far less chance of being shot if it's a day when the chase is active!
