Not specific to the area, but you will find them being sold in most supermarkets, traditional butchers, and on markets (the latter two being the better quality)
You will find a lot of Limousin beef and veal as we are not far from that region, I'm not a lover of veal myself I find the flavour a bit bland and I like my cow Red. But yes you will find it easy.
As for the sausage, don't confuse the two.
Saucisse is what you would probably know as a Sausage and it needs to be cooked.
A Saucisson is a dried/cured sausage you eat as it is and doesn't need cooking
I'm not keen on the French Saucisse as I like a good old banger so we make our own.
The Saucisson however are very nice and come in many different recipes, on the larger markets you will often find a stall selling nothing but Saucisson and you can usually sample before you buy.
Look out for the local Rillons (Pork belly very slowly cooked with herbs and spices) Yum Yum, they taste different depending where you get them as recipes vary. (again supermarket ones are not so good in my opinion).
