Now that is a very good question...
Health insurance tends to be quite expensive and is often for an annual period. There are policies, however, designed for your situation where the cover can be stopped (or downgraded to a top-up or 'mutuelle' insurance) as soon as you are in the French system and armed with a carte vitale or Amelie attestation to say that you are covered. As with all insurance matters, it's probably worth trying three or so different providers - including your bank. They are bound to have schemes available and may well be competitive if they value you as a client. There is one French insurance broker I have dealt with who has a very good understanding of these matters. He speaks excellent English and is used to dealing with 'les Brits'.
